Apricot Glazed Chicken Wings

Over a month ago I polled readers to vote for Mangia Paleo’s next recipe. The options were Grilled Italian Veggie Platter, Spinach Egg Cups, Melon and Prosciutto, and Apricot Chicken Wings. Top voted recipes were grilled veggies and spinach egg cups. But I hadn’t forgotten about the chicken wings.

These are a sweet and sticky mess perfect for game day. Not that I watch sports. But if I did these would be on the menu. Go team!

I’m a big fan of combining sweet and savory. Or sweet and sour. Have you seen my Strawberry Basil Chicken recipe? Like that. This is like that. Sweet apricot and savory coconut aminos combine for a juicy protein-packed bite. The type of preserves you buy are going to be pretty important in this recipe. If they’ve got chunks of apricot in it that’s cool and all, but it won’t coat the chicken as well. Look for smooth jam/jelly/preserves with no added sugar (read the ingredients!). Seriously just look at the back…and if there are ingredients other than apricots, fruit juice, paleo sugar like in honey or juice, and citric acid just put the jar back.

AHH! Naked wings? Another important part of the recipe is double baking the chicken wings. You’re going to bake the chicken while you get your apricot glaze together. Then, you’re going to toss the chicken in the glaze and pop it back in the oven to bake more. If you added the glaze first it would burn being in the oven too long. It’s mostly because of the high sugar content from the fruit. So just follow the recipe and you’re good to go. 🙂

Ingredients
  • 1.5 lb chicken wings
  • 1/3 cup apricot preserves smooth, not chunky
  • 1/4 cup coconut aminos
  • 3 tbsp apple cider vinegar

Instructions
  1. Preheat oven to 400 degrees F
  2. Pat chicken wings and drumettes dry with a paper towel. Place on nonstick baking sheet and cook in oven for 25 minutes
  3. While chicken cooks prep the apricot glaze. In a small saucepan add apricot preserves, coconut aminos, and apple cider vinegar. Simmer on medium-low for about 10 minutes or until it starts to reduce slightly. Set aside on stove.
  4. Remove chicken from the oven and, in a medium bowl, toss in the glaze. Save a bit of glaze to top off after cooking.
  5. Place glazed chicken back on the baking sheet. Return to oven for another 20 minutes.
  6. When finished, toss or coat chicken in leftover glaze. Serve.
