Fruit and Cookie Combos

ME WANT COOKIE. Cappellos has turned me into such a cookie monster. I’ve teamed up with them to help introduce the newest Cappellos items – cookie dough! I really love their products because it was the first paleo pasta I found. The gnocchi is my favorite (team potato!) and I use their lasagne sheets to make apple pie ravioli. Cappellos cookies are sweet treats that come ready to bake in less than 10 minutes. But when you’re a foodie it’s hard not to transform them with other ingredients.

Sooooooooooooo…I added fruit to each of the cookies. You’re in for a real treat in this blog post. There are FOUR RECIPES. Yeah. That’s right. I snuck in a recipe for each cookie.

The newest cookie dough additions are Ginger Snap, Lemon Zest, Chocolate Chip, and Double Chocolate. They are paleo, gluten free, grain free, vegan, and delicious. You can eat them raw, so one of these recipes is designed for that. The first 3 are baked.

Because autumn just started I’ll begin with a fall inspired baked Apple Ginger Snap Crumble.

APPLE GINGER SNAP CRUMBLE

GINGER SNAP RECIPE DIRECTIONS

  1. Preheat oven to 350 F
  2. Peel and slice 2 apples. Cut slices in half to fit ramekin.
  3. Toss apple slices in cinnamon and add to ramekins.
  4. Crumble raw cookie dough on top.
  5. Bake in oven 15-20 min.

Makes 4 (1 cookie and ½ apple per ramekin)

LEMON RASPBERRY THUMBPRINTS

LEMON THUMBPRINT RECIPE DIRECTIONS

  1. Preheat oven to 350 F
  2. Cut raw cookies in half.
  3. Roll halves into balls with your hands.
  4. Lightly press thumb into center of each ball.
  5. Fill thumbprint with ¼ tsp of raspberry preserves.
  6. Bake for 12 min.
    Makes 16 cookies

STRAWBERRY CHOCOLATE BRUSCHETTA

STRAWBERRY BRUSCHETTA RECIPE DIRECTIONS

  1. Preheat oven to 350 F
  2. Remove raw cookies from package.
  3. Press flat with palm of hand so cookies are ¼ in thin .
  4. Bake in oven 10 min.
  5. While baking, finely dice 5 -6 fresh strawberries. Mix in bowl with a sprinkle of coconut sugar.
  6. Remove cookies from oven. Let cool.
  7. Flip cookie over so the flat side is facing up. Spoon strawberry mixture on top.

Makes 8 cookies.

RAW DOUBLE CHOCOLATE MONKEY BITES

RAW CHOCOLATE TRUFFLE RECIPE DIRECTIONS

  1. Flatten out raw cookie dough.
  2. Cut small cubes of banana.
  3. Place banana cube in the middle of the cookie dough. Form dough around banana and form into a ball.
  4. Roll the truffle in chopped walnuts or shaved coconut. (Optional)
  5. Refrigerate (or freeze! yum.) for 20 minutes before eating.
