Mangia Paleo’s got some ice, ice, baby!

While your non-paleo friends are dripping melted vanilla ice cream on their sweaty bare skin, you’ll be refreshed with a light and not-so-messy treat. It’s not everyday you can prance around in your itsy bitsy teenie weenie yellow polka dot bikini. So, on days when you can’t seem to cool off regardless of how little your swimsuit is just try these frozen fruit pops. My recipe includes coconut water so you get a boost of hydration during a hot day in the sun.

And just because I love you SO MUCH I have included not one, but two different recipes. They are both so easy it hurts.

BERRY BLAST POPSICLE

  • 1 cup strawberries (about 8 berries)
  • 1/3 cup blackberries
  • 1/4 cup blueberries
  • 1/2 cup coconut water
  • 2-4 tbsp honey or paleo approved sweetener (optional)
  • Makes 3 pops

MIXED FRUIT POPSICLE

  • 2 cups frozen mixed fruit (peaches, mango, pineapple, strawberries)
  • 1/2 cup coconut water
  • 2-4 tbsp honey or paleo approved sweetener  (optional)
  • Makes 3 pops

Directions: Blend all ingredients together. This makes a delightful smoothie, too. Nevermind that… we’re making frozen pops! Pour into your pop molds and get ready to MANGIA on a hot day.

    Yum these look delicious. I don’t really have the patience to wait for them to freeze though so I will probably be drinking them like a smoothy!

    These sound delicious! I love anything with coconut water. I just made some strawberry mint popsicles that are kind of similar but since I used coconut milk they are more creamy than icy but still super refreshing. I need to try these for sure!
