Paleo Snobb Salad

A Cobb salad is a staple on most American dining menus. Thankfully it’s easy to translate to a paleo friendly choice. I call this the “Snobb” salad because of having to adjust it while ordering at a restaurant. You know, when you sound like some health snob cause you need to alter the dish so much. However, once you remove the cheese it ends up being relatively paleo. The dressing is what you have to watch out for because ranch or bleu cheese is a no-no. Don’t worry, I’ve got you covered.

Ingredients:

  • romaine and baby kale mix
  • 1/4 cup cherry tomatoes
  • 2 hard boiled eggs
  • 4 slices of turkey (or leftover turkey/chicken)
  • 3 slices of bacon
  • 1/2 avocado
  • 1/4 red onion

My deli meat and bacon are always nitrate free and I look for words like “hormone/antibiotic free”, “uncured” or I check the ingredients to be sure that sugar, if any, is less than 2%.

Directions:

Roll the turkey slices and cut by 1 inch spaces while rolled. Chop or crumble the bacon. Thinly slice some onion. Roughly chop the lettuce.

Add lettuce to a bowl. Lightly drizzle your favorite dressing. Then toss the lettuce and kale only. Add all the Cobb yummies on top.

Here are some dressing options for this power salad:
Traditional: olive oil, apple cider vinegar or lemon juice, salt and pepper.
Honey Dijon: dijon or brown mustard, raw local honey.
