Cooking every night is a struggle and sometimes not possible. So I am a big fan of meal prepping and getting creative with leftovers. If your empanada dough from the last post doesn’t come out correctly or you have an abundance of leftover filling, here’s some ideas.
Mini Beef and Chorizo Cups
Add the filling in small oven-safe dishes and you can make each one different. If you have leftover dough, line a greased ramekin with the dough and add filling. Or fill the ramekin first then top with the dough! Add any other veggies or herbs, too!
This is my go-to meal when I’m exhausted. Basically what I do is raid my fridge of all meat and veggies, add them to lettuce, and wrap it up! Pictured above is empanada filling with guacamole in a bibb lettuce wrap. I also cooked shredded carrots and bacon. Again, I raided my fridge and this is what happened. HAHA!
